Ayurveda recipe to slim down

Recipe from the Ayurveda kitchen in Birstein by Kerstin Rosenberg

 

Ingredients:

1/2 cup barley barley

1 red onion

1 small parsley root

1 small carrot

100 g leaf spinach

1 slice ginger

1 tsp ghee

1 tsp barberries

1/4 tsp curry powder

2 tbsp leaf parsley, chopped

1 MS black pepper, a little salt

1 MS ground cumin seeds

 

Preparation:

1. soak the barley in water for 3 to 4 hours.

Peel and dice the root vegetables, wash and drain the spinach. Finely chop the ginger.

Heat the ghee in a pot and sauté the onion. Add the barberries, ginger and curry powder and sauté briefly. 4.

Add the chopped root vegetables to the spice mixture and sauté for 2 to 3 minutes. 5.

5. add the barley, 2.5 cups of water, salt and bring to the boil.

After about 10 minutes, add the spinach leaves and let the stew simmer for another 20 minutes.

Season with fresh parsley leaves, black pepper, ground cumin and a little salt if desired.
